PRESSING

Fast and soft, by tradition

Camminare con quel contadino
che forse fa la stessa mia strada,
parlare dell’uva, parlare del vino
che ancora è un lusso per lui che lo fa.

(Rino Gaetano)

The second generation of Zambon wine-makers knows that to obtain a good wine the freshly-picked grapes must reach the winery very quickly to start pressing them and storing the juice in a very quick succession.

Time and tradition are, however, not forgotten and the love and attention needed at these delicate first moments of wine-making are still passed on from father to son, from grandfather to grandson.

Vittore’s children grew with these steady guidelines of love and patience.

Massimo spends his days amongst the vineyard’s long regular lines, tying, pruning, curing and studying vines and grapes as time goes by during the seasons that will lead to harvest-time.
