NATURALLY RE-FERMENTED IN BOTTLE


«Vittore», dedicated to our father, founder of the firm, is the wine that best represents the tradition of Valdobbiadene’s wine-making, where vine cultivation and wine expertise moved the first steps towards the top expression of today’s wine culture. “Sur lie” means “on lees”- literally the wine matures on its yeasts. It is an antique method known and used before under-pressure sparkling wine-making, where the yeasts left in the bottle help the second fermentation to take place. In this case, there is no disgorgement (taking dead lees or sediments out of the bottle). It is a sparkling wine, made by Glera grapes from our vineyards and re-fermented in bottle. This gives the wine unique and unmatchable characteristics, leading the taster straight into the core of the produce and its land. Somehow this wine tells the story of its origins and its becoming. Straw-yellow, fine and persistent bubbles, at the nose it presents typical bread-crust scent, slightly fruity and fresh. At the palate it recalls sugars, it has a good structure thanks to the “lying on the lees”, with good acidity and salty notes. The traditional pairing is with “Sopressa Trevigiana” (a locally-made fresh, large salami), also successful with mixed-meat spit-roast or graceful in marrying fish- and vegetable dishes.
